Full Professor at the Department of Agricultural and Food Sciences and Technologies
He holds a degree in Agricultural Sciences (Biotechnological track) from the University of Bologna. He conducted research at CSIRO in Sydney (Australia) and spent part of his career at the University of Udine (Food Science and Technology), first as a researcher and later as an associate professor. Since 2000, he has been a Full Professor (SSD AGR15) at the University of Bologna (Cesena campus). He serves as a board of auditors (probiviro) for SISTAL and the ISEKI Food Association (IFA), and has previously been a member of the Executive Committee of EFFoST and Coordinator of the Degree Programme Council in Food Technologies (2018–2024). He was Director of the CIRI Agroalimentare (2011–2018). He has served as Chairman of the EFFoST Annual Meeting (2013), the FoodInnova Conference (2017), and co-scientific chair of IUFoST 2024. He is the author or co-author of over 200 publications indexed in Scopus and has received several distinctions, including the IFA Academy Award (2014), Honorary Lifetime Membership from PTEP (Serbia), an honorary professorship from the University of La Frontera (Peru), and the IUFoST Academy Fellowship. From 2018 to 2024, he was President of the National Coordination of Degree Programmes in Food Science and Technology (COSTAL). He is listed among the World's Top 2% Scientists 2025 (Stanford University).
